Ingredients:
- 2 tablespoons crushed vanilla wafer cookies (can also use graham cracker crumbs)
- 1/3 cup pumpkin puree
- 1 egg
- 1 tablespoon milk
- 1 tablespoons brown sugar
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla
- pinch of salt
- whipped cream, for topping
- cookie crumbs, for topping
Preparation:
- In a small bowl, mix the pumpkin puree, egg, milk, brown sugar, pumpkin pie spice, vanilla, & salt until smooth.
- Place the cookie crumbs at the bottom of a mug and pour the filling on top.
- Microwave on high power for 2-3 minutes or until the filling has set.
- Top with whipped cream and extra cookie crumbs.
- Enjoy!
