Ingredients:

  • 2 tablespoons crushed vanilla wafer cookies (can also use graham cracker crumbs)
  • 1/3 cup pumpkin puree
  • 1 egg
  • 1 tablespoon milk
  • 1 tablespoons brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla
  • pinch of salt
  • whipped cream, for topping
  • cookie crumbs, for topping

Preparation:

  1. In a small bowl, mix the pumpkin puree, egg, milk, brown sugar, pumpkin pie spice, vanilla, & salt until smooth.
  2. Place the cookie crumbs at the bottom of a mug and pour the filling on top.
  3. Microwave on high power for 2-3 minutes or until the filling has set.
  4. Top with whipped cream and extra cookie crumbs.
  5. Enjoy!
