Ingredients:

  • 2 bananas, peeled & sliced into coins
  • 1/2 cup peanut butter
  • 2 tablespoons coconut oil, divided
  • 1 cup semi-sweet chocolate chips (or chocolate of choice)
  • 1 tablespoon coconut oil

Preparation:

  1. Slice the bananas into coins, & line a baking sheet with parchment paper.
  2. In a small bowl, add the peanut butter and 1 tablespoon of coconut oil.
  3. Microwave for 30 seconds, or until melted. Stir until smooth.
  4. Dip the banana coins in the peanut butter mixture to coat. With a fork transfer the coins onto the baking sheet.
  5. Pop them in the freezer to set, about 10 minutes.
  6. In another small bowl, add the chocolate chips and remaining 1 tablespoon coconut oil.
  7. Microwave for 30 seconds, or until melted. Stir until smooth.
  8. Repeat the dipping process coating the peanut butter banana coins in chocolate. With a fork transfer the coins onto the baking sheet once again.
  9. Freeze for an hour or overnight until solid.
  10. Enjoy!
