Ingredients:
- 2 bananas, peeled & sliced into coins
- 1/2 cup peanut butter
- 2 tablespoons coconut oil, divided
- 1 cup semi-sweet chocolate chips (or chocolate of choice)
- 1 tablespoon coconut oil
Preparation:
- Slice the bananas into coins, & line a baking sheet with parchment paper.
- In a small bowl, add the peanut butter and 1 tablespoon of coconut oil.
- Microwave for 30 seconds, or until melted. Stir until smooth.
- Dip the banana coins in the peanut butter mixture to coat. With a fork transfer the coins onto the baking sheet.
- Pop them in the freezer to set, about 10 minutes.
- In another small bowl, add the chocolate chips and remaining 1 tablespoon coconut oil.
- Microwave for 30 seconds, or until melted. Stir until smooth.
- Repeat the dipping process coating the peanut butter banana coins in chocolate. With a fork transfer the coins onto the baking sheet once again.
- Freeze for an hour or overnight until solid.
