Pumpkin Pie In A Mug
Ingredients:
2 tablespoons crushed vanilla wafer cookies (can also use graham cracker crumbs)
1/3 cup pumpkin puree
1 egg
1 tablespoon milk
1 tablespoons brown sugar
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla
pinch of salt
whipped cream, for topping
cookie crumbs, for topping
Preparation:
In a small bowl, mix the pumpkin puree, egg, milk, brown sugar, pumpkin pie spice, vanilla, & salt until smooth.
Place the cookie crumbs at the bottom of a mug and pour the filling on top.
Microwave on high power for 2-3 minutes or until the filling has set.
Top with whipped cream and extra cookie crumbs.
