Peanut Brittle

Ingredients:

  • 1 cup white granulated sugar

  • 1/2 cup honey

  • 1/4 cup water

  • pinch of salt

  • 1 cup roasted salted peanuts

  • 2 tablespoons unsalted butter

  • 1 teaspoon baking sods

  • 1 teaspoon vanilla

Extra tools: candy thermometer

Preparation:

  1. Line a baking sheet with parchment paper and set aside. Make sure the butter, baking soda, and vanilla are measured out and ready to go.

  2. In a heavy bottomed sauce pan over medium heat, add the sugar, honey, water, and salt.

  3. Stir until the sugar is dissolved, the mixture will start to bubble.

  4. Stop stirring and allow the sugar to cook. Keep track of the temperature using a thermometer, for an accurate reading the thermometer should not touch the bottom of the pan. The temperature is really key in this recipe! If it’s not hot enough the brittle won’t harden but if its too hot it will burn!

  5. Once the sugar reaches 250º F add in the peanuts and stir.

  6. Keep the mixture over the heat for a few more minutes until it reaches 300º F - keep a close eye because it heats up fast!

  7. At 300º F quickly remove the mixture from the heat, add in the butter, baking soda, and vanilla and stir. The mixture will look a bit foamy.

  8. Pour the mixture onto the baking sheet and quickly spread it out evenly.

  9. Cool the mixture completely, as it cools it will harden and turn into brittle. (You can speed up this process by popping it in the freezer)
