Healthy Fudgy Brownies

Ingredients:

  • 1/3 cup almond flour

  • 1/4 cup cocoa powder

  • 1/2 teaspoon sea salt

  • 1 cup semi-sweet chocolate chips, divided

  • 2 tablespoons coconut oil

  • 3/4 cup greek yogurt

  • 1 teaspoon vanilla

  • 2 tablespoons honey (or sweetener of choice)

  • 2 eggs

  • flaky salt, optional for topping

Preparation:

  1. Preheat oven to 350ºF and grease a 9x9 brownie pan.

  2. In a small bowl mix the almond flour, cocoa powder, and sea salt. Set aside.

  3. In a large bowl add the chocolate chips and coconut oil. Microwave at 30 second intervals until melted.

  4. Add greek yogurt, vanilla, honey, and 2 eggs. Whisk until smooth.

  5. Add dry ingredients and whisk again until combined.

  6. Pour into prepared pan and bake for 20 minutes or until set.

  7. Allow brownies to cool and sprinkle with flaky salt if using.

  8. Enjoy!
