Berry Cobbler For One
Ingredients:
1 cup mixed berries (fresh or frozen)
2 tablespoons sugar, divided
1/4 cup + 2 teaspoons flour, divided
1 teaspoon lemon juice
1/2 teaspoon baking powder
pinch of salt
2 tablespoons cold cubed butter
2 tablespoons milk
1/2 teaspoon vanilla
Extra tools: ramekin dish
Preparation:
Preheat oven to 350º F.
in a small bowl, mix the berries, 1 tablespoon of sugar, 2 teaspoons of flour, and lemon juice until the berries are evenly coated. Place the berries in a ramekin dish and set aside..
in another small bowl, mix the remaining 1/4 cup flour, 1 tablespoon sugar, baking powder, and salt.
Add in the cold cubed butter and use a fork to cut the butter into the flour mixture until you get a sandy texture.
Add in the milk and vanilla and stir until you get a dough.
Place the dough on top of the berry mixture and bake for 35 minutes or until the top is cooked through and the berries are bubbling.
