buttermilk biscuits

Ingredients:

  • 3 cups flour + more for dusting

  • 1 tablespoon baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon salt

  • 1/2 cup cold cubed butter

  • 1 cup buttermilk + more for brushing

  • 1 tablespoon honey

Preparation:

  1. Preheat oven to 425°F

  2. Add flour, baking powder, baking soda, and salt to a large bowl.

  3. Whisk until combined.

  4. Add the cubed butter and cut into the dry ingredients with a pastry cutter or fork. If you use your hands work quickly so the butter doesn’t melt into the flour.

  5. Make a well in the center of the flour and add the buttermilk and honey.

  6. Stir with a wooden spoon or spatula until just combined– don’t over-mix!

  7. Flour your surface and turn the dough out onto the table. Shape the dough into a rectangle with your hands.

  8. Fold one side into the center, then the other side like a book. Turn the dough horizontally and flatten with your hands. Repeat the same fold again. Turn and fold one more time and flatten.

  9. Cut the dough into about 3 inch circles. You can use a cookie cutter or a glass. Roll any scraps I made about 8 biscuits.

  10. Place the biscuits in a greased cast-iron skillet, the biscuits should be touching.

  11. Brush the tops with buttermilk and bake for 15-20 minutes or until biscuits are lightly golden on top.
