Mixed Berry Crisp
Ingredients:
1 cup oats (i used rolled but can use quick cook)
1 cup flour
1 cup brown sugar
1 teaspoon salt
1 cup cold butter, cubed
5 cups mixed berries (fresh or frozen)
1/4 cup granulated sugar
1/4 cup flour
1 tablespoon lemon juice
2 teaspoons vanilla
Preparation:
Preheat the oven to 350º F and grease a 9x13 inch pan.
In a large bowl, mix the oats, flour, brown sugar and salt.
Add the cold cubed butter and cut into the dry ingredients with a fork or your hands until you get a course sandy texture. (you can leave some bigger chunks of butter)
Add the berries to the pan, sprinkle with the sugar and flour. Add the lemon juice and vanilla and stir to combine.
Spread the crumble topping all over the top in an even layer.
Bake for 45 minutes or until golden and bubbly.
Enjoy with ice cream or plain!
