Frozen Chocolate Peanut Butter Banana Bites
Ingredients:
2 bananas, peeled & sliced into coins
1/2 cup peanut butter
2 tablespoons coconut oil, divided
1 cup semi-sweet chocolate chips (or chocolate of choice)
1 tablespoon coconut oil
Preparation:
Slice the bananas into coins, & line a baking sheet with parchment paper.
In a small bowl, add the peanut butter and 1 tablespoon of coconut oil.
Microwave for 30 seconds, or until melted. Stir until smooth.
Dip the banana coins in the peanut butter mixture to coat. With a fork transfer the coins onto the baking sheet.
Pop them in the freezer to set, about 10 minutes.
In another small bowl, add the chocolate chips and remaining 1 tablespoon coconut oil.
Microwave for 30 seconds, or until melted. Stir until smooth.
Repeat the dipping process coating the peanut butter banana coins in chocolate. With a fork transfer the coins onto the baking sheet once again.
Freeze for an hour or overnight until solid.
