Ingredients:

  • 3 tablespoons olive oil
  • 6-8 tomatoes, sliced in half and cored (I used both Kumato and Roma tomatoes)
  • 6 cloves garlic, smashed and roughly chopped
  • 1 shallot, diced
  • salt, to taste
  • pepper, to taste
  • red chili flakes, to taste
  • 1/4 cup fresh basil, torn

Preparation:

  • Preheat oven to 400ºF.
  • Drizzle oil over baking sheet and add the shallots and garlic.
  • Add the tomatoes, cut side down.
  • Season with salt, pepper, and chili flakes.
  • Add the torn basil and bake for 30 minutes or until the skins of the tomato are wrinkly.
  • Peel the skins of the tomatoes off and transfer to a bowl.
  • Mash the tomatoes with a fork or potato masher until it’s as smooth as you like! (I like mine a little chunky)
  • Taste and season if needed.
  • Serve with your favorite pasta & fresh grated cheese, on toast with eggs, or with whatever you desire!
