Ingredients:
- 3 tablespoons olive oil
- 6-8 tomatoes, sliced in half and cored (I used both Kumato and Roma tomatoes)
- 6 cloves garlic, smashed and roughly chopped
- 1 shallot, diced
- salt, to taste
- pepper, to taste
- red chili flakes, to taste
- 1/4 cup fresh basil, torn
Preparation:
- Preheat oven to 400ºF.
- Drizzle oil over baking sheet and add the shallots and garlic.
- Add the tomatoes, cut side down.
- Season with salt, pepper, and chili flakes.
- Add the torn basil and bake for 30 minutes or until the skins of the tomato are wrinkly.
- Peel the skins of the tomatoes off and transfer to a bowl.
- Mash the tomatoes with a fork or potato masher until it’s as smooth as you like! (I like mine a little chunky)
- Taste and season if needed.
- Serve with your favorite pasta & fresh grated cheese, on toast with eggs, or with whatever you desire!
