Eggnog
Ingredients:
6 egg yolks
3/4 cup white granulated sugar
1 cup heavy cream
2 cups whole milk
1/2 teaspoon nutmeg
pinch of salt
1/2 teaspoon vanilla
brandy or rum (optional)
cinnamon, for topping
Preparation:
In a bowl, whisk the egg yolks and sugar until pale yellow in color. Set aside.
In a saucepan over medium heat, add the cream, milk, nutmeg, and salt. Stir.
Allow the milk to come to a gentle simmer.
Add about 1 cup of the hot milk and quickly stir.
Stirring, add about 1 cup more of the hot milk.
Pour the egg mixture back into the saucepan with the remaining milk and place on the stove.
Cook, stirring constantly, over medium heat until the mixture starts to thicker a bit. Careful not to cook for too long or it will separate!
Remove from the heat and add the vanilla.
Transfer to a pitcher and allow to cool (it will thicken more once chilled).
Transfer to a glass, spike with brandy or rum if using, & a sprinkle of cinnamon.
