Ingredients:
Crust
- 2 sticks unsalted butter, melted
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 2 cups + 2 Tablespoons all-purpose flour
- AS MANY RAINBOW SPRINKLES AS YOU WANT! (Or 1/4 cup)
Lemon Filling
- 2 cups granulated sugar
- 6 Tablespoons all-purpose flour
- 6 large eggs
- 1 cup fresh lemon juice (I used 7 lemons / fresh is best!)
Preparation:
- Preheat oven to 325 degrees and line a 9×13 inch dish (preferably glass!) with parchment paper.
- In a medium bowl, mix all the crust ingredients together until combined.
- Press the dough into the dish evenly.
- Bake the crust for 20 minutes or until just brown on the edges.
- In a medium bowl, mix the all the ingredients for the filling together.
- Pour the filling over the baked crust and bake again for 20-25 minutes, or until the filling no longer jiggles.
- Allow the bars to cool completely.
- Once cool, sprinkle the bars with powdered sugar.
- Slice & enjoy!
