Ingredients:

  • 1 pumpkin (I used a sugar pie pumpkin, it yielded 3/4 cup of seeds)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cumin

Preparation:

  1. Preheat oven to 350º F.
  2. Cut open your pumpkin and scoop out the seeds. Try to remove all of the pumpkin pulp.
  3. Place the seeds in a colander and rinse until clean.
  4. Dry the seeds between two towels. This will help them get extra crunchy!
  5. Place the seeds in a bowl and add the olive oil and spices.
  6. Toss to coat evenly and spread them out on a baking sheet.
  7. Bake for 13-15 minutes, tossing them halfway, until golden and toasted.
  8. Enjoy!
