Ingredients:
- 1 pumpkin (I used a sugar pie pumpkin, it yielded 3/4 cup of seeds)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon chili powder
- 1/4 teaspoon cumin
Preparation:
- Preheat oven to 350º F.
- Cut open your pumpkin and scoop out the seeds. Try to remove all of the pumpkin pulp.
- Place the seeds in a colander and rinse until clean.
- Dry the seeds between two towels. This will help them get extra crunchy!
- Place the seeds in a bowl and add the olive oil and spices.
- Toss to coat evenly and spread them out on a baking sheet.
- Bake for 13-15 minutes, tossing them halfway, until golden and toasted.
