Ingredients:
- 1 rack of ribs (I used 2.6 lbs of St Louis style pork spare ribs, they are flatter and easier to brown)
- Salt & pepper, to taste
- ~1 cup favorite dry rub (optional, I used a coffee & chocolate dry rub I purchased but you could always make your own with your favorite spices!)
- Favorite BBQ sauce
Preparation:
- Preheat oven to 300º F line a baking sheet with foil.
- Prepare the ribs by cutting off the membrane on the back, slide your knife along the edge and pull the membrane off with your hands.
- Season both sides with salt and pepper.
- Coat both sides of the ribs generously with your dry rub, if using. Place the ribs, meaty side up, and cover the ribs with foil.
- Bake in the oven for 2 hours. Ribs should be cooked through but very tender.
- Remove the ribs from the oven and discard the foil. Turn the oven to broil.
- Brush the ribs on both sides with BBQ sauce and place back in the oven for about 2 minutes or until the sauce starts to caramelize.
