Sweet Potato Fries with Dill Dip
Ingredients:
Sweet Potato Fries:
1 sweet potato, cut into fries
1 tablespoon olive oil
1 tablespoon fresh rosemary, chopped
1 teaspoon salt
1 teaspoon pepper
Yogurt-Dill Dip:
1/2 cup greek yogurt
1 tablespoon fresh dill, chopped
1 clove garlic, minced
1 tablespoon lemon juice
salt and pepper, to taste
Preparation:
Preheat oven to 425º F and line baking sheet with parchment paper.
In a bowl, toss the sweet potatoes with the olive oil, rosemary, salt and pepper.
Place on the baking sheet and bake for 15 minutes, flipping in halfway between.
For the yogurt dip, mix all of the ingredients together in a bowl.
