Slice and Bake Cookies
Ingredients:
3 cups all-purpose flour
2 teaspoons baking powder
1 cup granulated sugar
1 cup (2 sticks) unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
Food coloring (I used red)
sprinkles
Preparation:
In a medium bowl, stir together the flour and baking powder. Set aside.
In a large bowl, cream together the butter and sugar for two minutes.
Add the egg, vanilla extract and almond extract and beat until combined.
Gradually add the dry ingredients while beating on low. Increase the speed and beat until a dough forms.
Remove half of the dough from the bowl and set aside.
Add some red food coloring (about 1 teaspoon) to the remaining dough in the bowl and continue to beat with the mixture until the dough is even in color.
Place the first half of the dough in between two sheets of wax paper and roll out into a rough rectangle, 1/4 inch thickness. Repeat the same rolling process with the colored dough, try to make both doughs the same size and shape.
With the doughs still between the wax paper, pop them on a baking sheet and place in the fridge to chill for 1 hour.
Once chilled, remove the top piece of wax paper from each dough and using a pastry brush, brush the top of the plain dough with a little water.
Flip the colored dough on top and trip the edges with a knife into straight even lines.
With your hands at the short edge, tightly roll the dough into itself. Go slowly, if it cracks at all just piece it back together as you roll. Once the dough is rolled, roll it back and forth a couple times to encourage it’s log shape.
Add your sprinkles to a place and roll the dough log in them to coat the outside.
Wrap the dough and place in the fridge to chill for another hour.
Preheat oven to 350º F. Line a baking sheet with parchment paper.
Slice the dough log into cookies about 1/2 inch each.
Place on the prepared baking sheet and bake for 15 minutes. .
