Roasted Pumpkin Seeds
Ingredients:
1 pumpkin (I used a sugar pie pumpkin, it yielded 3/4 cup of seeds)
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
1/4 teaspoon cumin
Preparation:
Preheat oven to 350º F.
Cut open your pumpkin and scoop out the seeds. Try to remove all of the pumpkin pulp.
Place the seeds in a colander and rinse until clean.
Dry the seeds between two towels. This will help them get extra crunchy!
Place the seeds in a bowl and add the olive oil and spices.
Toss to coat evenly and spread them out on a baking sheet.
Bake for 13-15 minutes, tossing them halfway, until golden and toasted.
