Marshmallow Stuffed S'mores Cookies
Ingredients:
1/2 cup unsalted butter, softened
1/4 cup packed brown sugar
1/2 cup white granulated sugar
1 large egg
1 teaspoon vanilla
1 1/2 cups all purpose flour
1/2 cup graham cracker crumbs, plus more for rolling
1 teaspoon salt
1/2 teaspoon baking soda
1/2 cup chocolate chips
Marshmallows , for stuffing
Preparation:
Preheat oven to 350º F & grease a baking sheet or line with parchment paper.
In a large bowl, cream the butter and sugars together until light and fluffy. Use a hand mixer if you have one to make your life easier!
Add in the egg and vanilla and continue to beat until combined.
in a separate bowl, mix the flour, graham cracker crumbs, salt, and baking soda until combined.
Gradually add the dry ingredients into the wet ingredients and switch to a spatula to fold together, mixing fully before each addition. Don’t over-mix your dough or you’ll get a tough cookie!
Add in the chocolate chips and mix again until combined.
Chill dough in the refrigerator for about 10 minutes.
Place some graham cracker crumbs on a plate for rolling.
Scoop about 2 tablespoons of dough in your hand and flatten into a disk.
Place a marshmallow in the center and wrap the dough around the marshmallow, sealing it completely. Roll the dough into a ball in your hands, make sure there are no cracks, the marshmallow should be completely sealed.
Roll the balls of dough in the graham cracker crumbs and place on baking sheet at least an inch apart. The cookies will spread when baking!
Bake for 12 minutes or until the cookies are golden. The marshmallow will likely ooze out of them but that’s ok! The caramelizey, toasty bits of cooked marshmallow are the best part!
Allow to cool for a couple minutes on the baking sheet before transferring.
