Korean BBQ Short Ribs (Kalbi)

all you can eat, at home

Ingredients:

  • 3-4 pounds sliced bone-in short rib (i purchased mine at Costco)

Marinade:

  • 1/2 cup soy sauce

  • 1/2 cup water

  • 1/4 cup mirin (or rice wine)

  • 3 tablespoons sesame oil

  • 1/4 cup sugar

  • 2 tablespoons honey

  • 1/2 Asian pear, grated

  • 1/2 yellow onion, grated

  • 6 cloves garlic, minced

  • 4 green onions, thinly sliced (white and light green parts)

  • 1/2 teaspoon black pepper

  • 1 tablespoon sesame seeds 

Dipping sauce: (optional)

  • 1/4 cup soy sauce

  • 1/4 cup rice vinegar

  • 1 tablespoon sesame oil

  • 2 tablespoons mirin

  • 1 tablespoon honey

  • 2 green onions, sliced

  • 2 teaspoons sesame seeds

Preparation:

  1. In a large bowl, mix all of the marinade ingredients together. Once combined, Add in the meat, there will be a lot of meat but toss the meat in the marinade to coat. you can use your hands or tongs.

  2. Once the meat is coated in the marinade, cover the bowl with plastic wrap and place in the fridge to marinate. Let the meat marinate for a minimum of 6-8 hours but up to 24! (Overnight works perfectly!) I prepared mine in the morning and it was ready to grill by dinnertime! The more time it has, the more flavor.

  3. When the meat is ready, fire up your grill! Set grill to medium-high and place the ribs on. Cook for 2-3 minutes on each side, until nice and charred. The ribs are thin so they will cook fast!

  4. If you don’t have a grill you can use a grill pan on your stove or the broiler function in your oven. To broil, place the meat on a baking pan and set it on the top rack. Broil until slightly charred, (about 5 minutes) flip and broil for an additional 3 minutes. Be careful not to burn!

  5. To make the dipping sauce, mix all of the ingredients together in a small bowl! Serve the meat with a side of rice, your favorite vegetable, and the dipping sauce!
