Easy Roasted Tomato Sauce
Ingredients:
3 tablespoons olive oil
6-8 tomatoes, sliced in half and cored (I used both Kumato and Roma tomatoes)
6 cloves garlic, smashed and roughly chopped
1 shallot, diced
salt, to taste
pepper, to taste
red chili flakes, to taste
1/4 cup fresh basil, torn
Preparation:
Preheat oven to 400ºF.
Drizzle oil over baking sheet and add the shallots and garlic.
Add the tomatoes, cut side down.
Season with salt, pepper, and chili flakes.
Add the torn basil and bake for 30 minutes or until the skins of the tomato are wrinkly.
Peel the skins of the tomatoes off and transfer to a bowl.
Mash the tomatoes with a fork or potato masher until it’s as smooth as you like! (I like mine a little chunky)
Taste and season if needed.
Serve with your favorite pasta & fresh grated cheese, on toast with eggs, or with whatever you desire!
