Easy Peanut Butter Granola

Ingredients:

  • 3 cups rolled oats

  • 1/2 cup - 1 cup sliced almonds (or nut of choice! You can also boost health benefits by adding seeds like chia & flax)

  • 1 teaspoon cinnamon

  • 1/3 cup peanut butter (or nut butter of choice! Preferably natural)

  • 3 tablespoons coconut oil

  • 1/3 cup maple syrup (or sweetener of choice)

  • 1/2 to 1 teaspoon salt

  • 2 teaspoons vanilla extract

  • 3/4 cup unsweetened coconut flakes (or shredded coconut)

  • 3/4 cup chocolate chips (optional)

Preparation:

  1. Preheat oven to 325º F and grease a large baking sheet.

  2. In a large bowl, add the rolled oats, nuts (and seeds if using), and cinnamon. Mix it up to combine.

  3. In a saucepan over medium heat, add the peanut butter, coconut oil, maple syrup, salt and vanilla. Heat, stirring until melted down and combined. You can also do this in the microwave at 30 second intervals, stirring in between.

  4. Pour the peanut butter mixture over the oats and stir to combine.

  5. Pour the oats onto the prepared baking sheet and bake for about 25 minutes or until a little golden and toasty.

  6. Take granola out of the oven and and give it a stir to break it up. If you want bigger chunks of granola, don’t stir too much!

  7. Sprinkle the granola with the coconut flakes and bake again for about 5 minutes so the coconut can toast.

  8. Remove the granola from the oven and allow to cool at room temperature completely.

  9. Once cool, add the chocolate chips, if using, and give it a final stir.

  10. Store at room temperature in an airtight container for up to a month!
