Chinese Style Garlic Green Beans

chinese style garlic green beans

inspired by Din Tai Fung

Ingredients:

  • 1 lb green beans, washed and both ends trimmed off

  • Oil for frying

  • 6 cloves garlic, minced

  • Salt, to taste

Preparation:

  1. First blanch the green beans, boil pot of water and prepare a separate bowl of ice water.

  2. Place the green beans in the boiling water and cook for about 30 seconds. The green beans should still be crisp so don’t cook them for too long!

  3. Remove the beans with slotted spoon and immediately put them in the ice water, this process of shocking the beans will help preserve their vibrant green color!

  4. Pat the beans dry with paper towels.

  5. In a wok or frying pan over medium-high heat add the oil to about 1/4 inch deep.

  6. Once the oil is hot, throw the beans in. Cook, tossing in the oil, for about 1 minute. The skins may bubble a bit, don’t worry! Just don’t cook for too long.

  7. Remove the beans from the oil and place on paper towels to drain off excess.

  8. Discard all but about 1 tablespoon of oil and return the pan to the heat.

  9. Add the garlic to the hot oil, add the beans back, season with salt and toss again for another minute or so just until the garlic is fragrant and slightly toasted.

  10. Enjoy!
