4-Ingredient Banana Donuts
Ingredients:
Donuts:
1 banana, mashed
1 cup all purpose flour
1/2 cup yogurt (I used plain yogurt)
1/2 teaspoon baking soda (or 1 1/2 teaspoons baking powder)
Oil for frying (use vegetable or peanut oil)
Cream Cheese Glaze:
2 tablespoons cream cheese, softened
1/2 cup powdered sugar
1/2 teaspoon vanilla
1/4 cup heavy cream (or milk)
Preparation:
Make the donuts: In a large bowl, mix the flour, yogurt, baking soda, and mashed banana with a spatula until combined. It should make a wet dough. Don’t over-mix or knead the dough, just mix until combined.
Add oil to a pot over medium-high heat. You need enough oil to submerge the donuts!
For safety, use a thermometer to check the temperature of your oil. Heat oil to about 320º F.
Oil a spoon and scoop out a spoonful of dough. Once oil is hot, carefully drop in your donuts. The dough should slide off of the spoon easily into the oil. Be careful not to splash yourself!
Drop a few donuts into the oil, don’t overcrowd the pot or the temperature will drop!
Using chopsticks or a kitchen tool, flip around the donuts in the oil to ensure they cook all around evenly.
Once golden brown remove the donuts with the chopsticks or a slotted spoon. Place donuts on paper towels to drain.
You can eat the donuts plain, with powdered sugar, or with a glaze! To make the glaze: place the softened cream cheese in a bowl, add the powdered sugar and start to mix with a hand mixer.
Add in the vanilla and heavy cream and mix again until smooth and combined. The glaze should be loose but if its too thick add more heavy cream.
Dip the donuts in the glaze and enjoy!
