Ingredients:
- 3 cups flour + more for dusting
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup cold cubed butter
- 1 cup buttermilk + more for brushing
- 1 tablespoon honey
Preparation:
- Preheat oven to 425°F
- Add flour, baking powder, baking soda, and salt to a large bowl.
- Whisk until combined.
- Add the cubed butter and cut into the dry ingredients with a pastry cutter or fork. If you use your hands work quickly so the butter doesn’t melt into the flour.
- Make a well in the center of the flour and add the buttermilk and honey.
- Stir with a wooden spoon or spatula until just combined– don’t over-mix!
- Flour your surface and turn the dough out onto the table. Shape the dough into a rectangle with your hands.
- Fold one side into the center, then the other side like a book. Turn the dough horizontally and flatten with your hands. Repeat the same fold again. Turn and fold one more time and flatten.
- Cut the dough into about 3 inch circles. You can use a cookie cutter or a glass. Roll any scraps I made about 8 biscuits.
- Place the biscuits in a greased cast-iron skillet, the biscuits should be touching.
- Brush the tops with buttermilk and bake for 15-20 minutes or until biscuits are lightly golden on top.
